- 1/4 cup peanut butter or almond butter
- 1/4 cup granola
- 1/4 cup chocolate chips or caramel sauce
- A sprinkle of cinnamon (optional)
Instructions:
- Start by washing the apples and slicing them into thin rounds, making sure to remove the core.
- Spread the apple slices out on a large plate in an attractive way.
- Drizzle peanut butter or almond butter over the apple slices. Then sprinkle granola and chocolate chips on top, or drizzle caramel sauce for a sweeter touch.
- If desired, add a sprinkle of cinnamon for extra flavor.
- Grab a fork and enjoy your delicious apple nachos!
2. Pumpkin Muffins
Ingredients:
- 1 can (15 oz) pumpkin puree
- 1 cup sugar
- 1/2 cup vegetable oil
- 4 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- Optional: chocolate chips or nuts
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract. Mix until smooth.
- In another bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt. Gradually add this dry mixture to the pumpkin mixture, stirring until combined.
- Fold in chocolate chips or nuts if you’d like.
- Line a muffin tin with paper liners and spoon the batter into each cup, filling about 2/3 full.
- Bake for 20-25 minutes or until a toothpick comes out clean. Let cool before enjoying!
3. Cheesy Pumpkin Quesadillas
Ingredients:
- 4 small flour tortillas
- 1 cup pumpkin puree
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 teaspoon cumin (optional)
- 1/2 teaspoon garlic powder
- Olive oil for cooking
Instructions:
- In a bowl, combine pumpkin puree, shredded cheese, cumin, and garlic powder. Stir until well combined.
- Spread the pumpkin mixture evenly over two tortillas, then top with the remaining tortillas.
- Heat a skillet over medium heat and add a little olive oil. Cook one quesadilla for 2-3 minutes on each side until golden and crispy. Repeat with the second quesadilla.
- Cut into wedges and serve warm!
