<p>When people hear of this dish, especially younger kids, they often say ‘Ew! Coleslaw?!’  I’ve seen many adults turn their noses to the dish too. But don’t worry.  This will beat both KFC’s version and your old recipe. Let’s bring a whole new flavor palate to cabbage. Because really, it is a perfectly respectable veggie.</p>
<p>This recipe actually comes from my grandma on my mom’s side.  She wasn’t afraid to add a little bacon to things. She also added apple cider vinegar, which not only has a lot of kick but also contains many health benefits.</p>
<p>In this modern spin on her recipe, I replace green cabbage with purple cabbage. Purple cabbage is more nutrient-dense than green cabbage.  Most dark-colored or reddish vegetable is (So the same goes for heirloom carrots, blue/ dark tomatoes, etc). Another reason to switch over to purple cabbage ( also known as blaukraut)  is that it looks gorgeous!  When it comes to hosting for dinner, looks are everything. Now, let’s get started:</p>

<p><span style="font-weight: 400;">This bright side dish will make your taste buds ecstatic. This coleslaw is a far cry from adding some mayo to a pre-shredded mix.  It’s easy to make, so be sure to save this recipe for later!</span></p>

<h3><b>How Long Does it Keep?</b></h3>
<p><span style="font-weight: 400;"> You can make the dressing for the coleslaw up to two or three days in advance, and then toss it the day you plan to eat it.  It keeps for about two days after it’s made.  Longer than this won’t hurt you, but the cabbage with probably gets a little soggy, so be sure to eat it up sooner rather than later!</span></p>
<p><span style="font-weight: 400;">Try this dish with barbequed pork, burgers, or fish!  The brightness of this side will make everything else shine.</span></p>
