- 8 oz whole-grain pasta
- 1 cup cherry tomatoes halved
- 1 cup diced cucumber
- 1 cup diced bell peppers
- 1/2 cup diced red onion
- 1/4 cup sliced black olives
- 1/4 cup feta cheese crumbled
- 2 tbsp fresh basil chopped
- 2 tbsp fresh parsley chopped
Homemade Dressing
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tbsp dijon mustard
- 1 clove garlic minced
- 1 tsp honey
- salt and pepper to taste
Cook the pasta according to the package directions. Drain and rinse with cold water to cool it down.
In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell peppers, red onion, black olives, feta cheese, basil, and parsley.
In a small mixing bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic, honey, salt, and pepper.
Pour the dressing over the pasta salad and toss everything together until well combined.
Chill the pasta salad in the refrigerator for at least 30 minutes before serving to let the flavors meld together.
