College is a weird time. We have so much energy but not a lot of time to do everything we want. There’s always something happening, whether it’s festivals, college functions, relationships, or hanging out with friends. Life is hectic, and we often don’t have an hour to cook. Most college students, including myself, tend to eat whatever we find on our way home.

However, eating out all the time isn’t the healthiest option, so I’ve come up Simple Recipes for College Students. They’re quick, simple, and delicious!

Simple Recipes for College Students

1. One-Pan Chicken and Veggies

This easy dish requires minimal cleanup and is packed with nutrients.

Ingredients:

  • 1 chicken breast, cut into bite-sized pieces
  • 1 cup broccoli florets
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Place the chicken and veggies on a baking sheet.
  3. Drizzle with olive oil and sprinkle with garlic powder, paprika, salt, and pepper.
  4. Toss everything together to coat evenly.
  5. Bake for 20-25 minutes, or until the chicken is cooked through and the veggies are tender.
  6. Serve hot and enjoy!

2. Easy Stir-Fry Noodles

This quick and customizable stir-fry is perfect for using up leftovers and takes just minutes to prepare. Stir-fries are my favorite because you can literally throw in anything, and it somehow tastes good and pretty unique.

Ingredients:

  • 1 packet instant noodles (discard the seasoning packet)
  • 1 cup mixed vegetables (carrots, peas, bell peppers, etc.)
  • 1/2 cup cooked protein (chicken, tofu, shrimp)
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce (optional)
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 1 tablespoon vegetable oil

Instructions:

  1. Cook the noodles according to the package instructions, drain, and set aside.
  2. In a large pan, heat the vegetable oil over medium heat.
  3. Add the minced garlic and stir-fry for 30 seconds.
  4. Add the mixed vegetables and cooked protein, and stir-fry for 3-5 minutes, until the vegetables are tender.
  5. Add the cooked noodles to the pan.
  6. Pour in the soy sauce, hoisin sauce (if using), and sesame oil, and toss everything together until well combined and heated through.
  7. Serve immediately.

3. Microwave Mug Omelette

Perfect for a quick breakfast or snack, this mug omelette is customizable and ready in minutes.

Ingredients:

  • 2 eggs
  • 2 tablespoons milk
  • 1/4 cup diced vegetables (bell peppers, spinach, mushrooms)
  • 1/4 cup shredded cheese
  • Salt and pepper to taste

Instructions:

  1. In a microwave-safe mug, whisk together the eggs and milk.
  2. Add the diced vegetables and shredded cheese.
  3. Season with salt and pepper, and mix well.
  4. Microwave on high for 1-2 minutes, or until the eggs are set and fully cooked. (Microwave times may vary, so check every 30 seconds.)
  5. Let it cool slightly before eating.
