Pumpkin Recipes

1. Classic Pumpkin Pie

Ingredients:

  • 1 unbaked pie crust
  • 1 can (15 oz) pumpkin puree
  • 3/4 cup sugar
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 2 large eggs
  • 1 can (12 oz) evaporated milk

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, mix together the pumpkin puree, sugar, salt, cinnamon, ginger, and cloves.
  3. Beat in the eggs until well blended.
  4. Gradually stir in the evaporated milk.
  5. Pour the pumpkin mixture into the pie crust.
  6. Bake for 15 minutes in the preheated oven. Then reduce the temperature to 350°F (175°C) and bake for an additional 35-40 minutes, or until a knife inserted into the center comes out clean.
  7. Allow to cool completely before serving. Top with whipped cream if desired.

2. Pumpkin Soup

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 can (15 oz) pumpkin puree
  • 4 cups vegetable or chicken broth
  • 1/2 cup heavy cream
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • Salt and pepper to taste
  • Optional: Pumpkin seeds and fresh parsley for garnish

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the garlic and cook for another minute.
  3. Stir in the pumpkin puree and broth. Bring to a simmer and cook for 15 minutes.
  4. Stir in the heavy cream, nutmeg, and cinnamon. Season with salt and pepper.
  5. Use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup in batches to a blender.
  6. Serve hot, garnished with pumpkin seeds and fresh parsley if desired.

3. Pumpkin Spice Muffins

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/2 cup vegetable oil
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1/2 tsp vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  3. In another bowl, mix the oil, pumpkin puree, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool on a wire rack before enjoying.
