These recipes are simple, yet they’re sure to delight everyone!

1. Apple Nachos

Ingredients:

  • 2 apples (any variety)
  • 1/4 cup peanut butter or almond butter
  • 1/4 cup granola
  • 1/4 cup chocolate chips or caramel sauce
  • A sprinkle of cinnamon (optional)

Instructions:

  1. Start by washing the apples and slicing them into thin rounds, making sure to remove the core.
  2. Spread the apple slices out on a large plate in an attractive way.
  3. Drizzle peanut butter or almond butter over the apple slices. Then sprinkle granola and chocolate chips on top, or drizzle caramel sauce for a sweeter touch.
  4. If desired, add a sprinkle of cinnamon for extra flavor.
  5. Grab a fork and enjoy your delicious apple nachos!

2. Pumpkin Muffins

Ingredients:

  • 1 can (15 oz) pumpkin puree
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • Optional: chocolate chips or nuts

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract. Mix until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt. Gradually add this dry mixture to the pumpkin mixture, stirring until combined.
  4. Fold in chocolate chips or nuts if you’d like.
  5. Line a muffin tin with paper liners and spoon the batter into each cup, filling about 2/3 full.
  6. Bake for 20-25 minutes or until a toothpick comes out clean. Let cool before enjoying!

3. Cheesy Pumpkin Quesadillas

Ingredients:

  • 4 small flour tortillas
  • 1 cup pumpkin puree
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 teaspoon cumin (optional)
  • 1/2 teaspoon garlic powder
  • Olive oil for cooking

Instructions:

  1. In a bowl, combine pumpkin puree, shredded cheese, cumin, and garlic powder. Stir until well combined.
  2. Spread the pumpkin mixture evenly over two tortillas, then top with the remaining tortillas.
  3. Heat a skillet over medium heat and add a little olive oil. Cook one quesadilla for 2-3 minutes on each side until golden and crispy. Repeat with the second quesadilla.
  4.  Cut into wedges and serve warm!
