Easy Ground Turkey Tacos
There is something about taco Tuesday. Tacos have simple ingredients, they are easy to cook, and of course, I always want to find a way to make it healthier (hence the spinach, and using ground turkey instead of ground beef). This is by far my one of my kids’ favorite meals of the week. Sometimes we do tostadas instead of tortillas, gotta change it up a bit, or we will have this on a Wednesday night instead of Tuesday (gasp). Either way, the fresh flavors come together and everyone is satisfied.

Most who know me are aware that I am a genuine Trader Joe’s junkie, I love everything about that store, including the low prices! All of these ingredients can be found at the beloved Trader Joe’s, they even have hard shell tacos. I usually have all of the staples for Taco Tuesday available any night, and the trick to keeping avocados that perfect shade of ripeness is to keep them in the refrigerator once they have ripened. I’ve actually forgotten about a few avocados in the refrigerator for a week and when I finally used it, it was still good.

Easy Ground Turkey Tacos
Equipment
- Skillet
- tortilla warmer
- Knife
- cutting board
Ingredients
- 1 lb Ground turkey
- 3 tbsp taco seasoning (or make your own)
- 2 handfulls Spinach
- 2 handfulls lettuce of choice
- 1/2 cup red onion
- 1/2 cup cilantro
- 1 cup mexican shredded cheese
- 1/2 cup sour cream
- 1/2 cup salsa
- 2 whole avocados
- 1 bag tortillas or tostadas or taco shells
Instructions
- season and cook the turkey on medium heat, usually takes about 10 minutes
- chop the red onion, cilantro, spinach/lettuce and avocado, place them in serving bowls as well as the rest of the ingredients
- Warm tortillas or shells
- Set up an assembly line and pile together all of the ingredients
